1 Sea bream (700 grams, ready to cook)
200 grams potatoes
salt
peppers
50 grams butter
2 Tbsps vegetable oil
1 sprig thyme
thyme (to sprinkle)

Preparation steps

Rinse the potatoes, peel and cut into thin slices. Blanch the potato slices in boiling salted for 3 minutes. Drain and let cool.

Rinse the sea bream and pat dry. Fill the inside of sea bream with a sprig of thyme and season well with salt and pepper. Sprinkle the sea bream with thyme leaves and place the potato slices over in the pattern of scales. Melt some butter and brush the potato slices with it.

Grease an ovenproof dish with butter and put the sea bream carefully in it. Bake in a preheated oven at 200°C (fan: 180°C, gas mark 3) (approximately 400°F) for about 30 minutes, until the potatoes are golden brown. At the end of the cooking time, switch the oven to grill and let brown for another 5 minutes, watching carefully.
