6 ⅔ cups waxy potatoes
2 Tbsps chopped Fresh herbs (rosemary, thyme)
2 cups milk
¼ cup double cream (or more of necessary)
salt

1 ½ cups Gruyere (grated)

Preparation steps

Peel the garlic. Rub the baking dish with the garlic clove and then grease with butter. Wash and peel the potatoes and slice very thinly. Blanch in boiling, salted water for 3 minutes then drain well. Arrange the potato slices in the baking dish in neat layers, sprinkling the herbs over the potatoes when the dish is about half full. Continue add layers of potatoes until the dish is full. Whisk the milk, cheese and double cream and season with salt and pepper. Pour over the potatoes. The potatoes should be just covered - add a little more cream if necessary.

Bake in a preheated oven (180°C) for about 40 minutes, until golden brown.
