100 grams Bacon (with rind)
1 onion
1 carrot
1 stalk Leeks (thin)
1 large Parsnip
2 Tbsps sunflower oil
100 grams Pearl barley
2 tsps Pastry flour
½ l Beef broth
¾ l Vegetable broth
3 bay leaves
2 Tbsps scallions
50 grams Smoked meat (thinly sliced)
100 milliliters Whipped cream
salt

Preparation steps

Cut rind from bacon and cut bacon into very small cubes. Set rind aside. Peel onion, carrots and parsley root. Remove outer layer from leek and cut in half lengthwise. Rinse and shake dry. Cut all vegetables into small cubes. Heat oil in a large pan and fry bacon with vegetables. Add barley and briefly cook. Dust with flour and stir in beef and vegetable broth. Bring to a boil and add bay leaves and bacon rind. Cover and simmer over low-medium heat for about 1 hour, stirring occasionally. Add more broth as needed.

Cut smoked meat into strips and add to soup. Season soup with cream, salt and pepper and remove rind and bay leaves. Serve garnished with chives.
