½ cup toasted Pine nuts
¼ cup grated Parmesan
¾ cup extra virgin olive oil

Preparation steps

1.
Pound the garlic with the salt and basil leaves in a pestle and mortar or blend in a food processor or blender.
2.
Add the pine nuts and pound or blend again. Put into a bowl and add half the cheese.
3.
Stir gently and add the olive oil, a tablespoon at a time and pound or blend until fully incorporated and the mixture is a smooth paste. Add the remaining cheese.
4.
Spoon into a cold sterilised jar and use within 2 weeks.
