1 bunch Basil
½ cup Parmesan
2 cloves garlic cloves
salt

cup extra virgin olive oil (plus extra to cover)

Preparation steps

1.
Put the almonds, basil, parmesan and garlic and a little salt and pepper in a food processor. Blend until smooth, scraping down the sides occasionally.
2.
With the motor running gradually pour in the olive oil until well blended and the consistency of your choice.
3.
Spoon into cold sterilised jars. Pour a little of the remaining oil over the top and seal tightly. Store in the refrigerator for up to 1 month
