Preparation steps

1.

Cut ham into small cubes. Peel, quarter and remove cores from apples. Cut quarters into small pieces. Crumble goat cheese. Peel onion and cut into thin rings. Drain beans and mix with ham, apples, goat cheese and onion rings in a bowl.

2.

To make dressing: Mix vinegar with mustard and season with salt and pepper. Whisk in oil until emulsified. Stir in parsley. Toss dressing with salad ingredients and let stand briefly.
