400 grams dried Fava bean
3 garlic cloves
4 Tbsps chopped parsley
1 Tomato
salt
peppers
½ tsp ground Cumin
150 milliliters olive oil
2 lemons (juice)

Preparation steps

1.

Rinse beans and soak overnight in plenty of cold water.

2.

Then boil in a pot, cover and cook over low heat for about 1 hour until the beans are soft.

3.

Peel the garlic. Blanch tomato for a few seconds, quarter, core and finely dice.

4.

Mix together the lemon juice and olive oil with parsley, pressed garlic, diced tomatoes, cumin, and season with salt. 

5.

Drain the fava beans and mix with the marinade.

6.

Cover and let sit overnight in the refrigerator.
