Preparation steps

1.

Melt the butter in a small pot until frothy. Add the flour, and cook briefly. Gradually incorporate the broth and season to taste with salt and pepper. Simmer for 10 minutes, stirring occasionally.

You can mix the egg yolks into the sauce to enrichen and thicken the sauce. If you do this, the sauce must not come to a boil. Season to taste with lemon juice.
