2 Tbsps olive oil
1 ½ kilograms Beef fillet (ready to cook)
freshly ground peppers
1 handful mixed Fresh herbs (Chives and parsley)
salt
1 Tbsp grainy Mustard

Preparation steps

1.

Grease roasting pan with a little oil. Rinse fillet, pat dry and tie with kitchen string into shape. Brush with remaining oil and season with pepper. Heat pan and sear meat on all sides. Place into a roasting pan and roast in preheated oven at 220°C (approximately 425°F) for about 30 minutes (depending on desired degree of doneness, longer or shorter).

Rinse herbs, shake dry and finely chop parsley leaves. Cut chives into small rings. Sprinkle herbs on a plate.

Remove meat from the oven, cover with aluminum foil and let rest for about 15 minutes. Remove foil and kitchen string, season with salt and mustard. Roll in herbs and arrange on a plate. Serve.
