- 4 filets mignon (each about 180 grams)
- salt
- peppers
- 1 Tbsp vegetable oil
- 1 garlic clove
- 20 grams scallions
- 3 sprigs parsley
- 50 grams softened butter
- 100 grams Quark
- 1 splash lemon juice
Preparation steps
1.
Rinse steaks, pat dry and season with salt and pepper. Place in a hot pan with oil and cook about 2 minutes or until golden brown. Cook an additional 2 minutes and then reduce heat. Cook until desired temperature is reached.

Peel garlic, chop and grind finely and mix with a pinch of salt. Rinse herbs, shake dry and set some aside for garnish. Pluck remaining parsley and finely chop. Mix chopped chives along with parsley and butter. Fold in quark and garlic and season with salt, pepper and lemon juice.
3.
Serve steaks with cheese and herb butter and garnish with the remaining herbs.
4.
Serve with boiled potatoes if desired.
