1 yellow Bell pepper
1 Zucchini
2 Tbsps olive oil
700 grams lean Beef (ready to cook)
sweet ground paprika
1 Tbsp Tomato paste
100 milliliters dry Red wine
350 milliliters Beef broth
3 allspice
3 peppercorns
3 bay leaves
1 Tbsp thyme
1 Tbsp rosemary
salt
freshly ground peppers
2 Tbsps balsamic vinegar
400 grams Whole Wheat Penne

Preparation steps

Peel shallots and quarter lengthwise. Peel garlic and chop finely. Rinse bell peppers, halve and remove seeds and ribs, cut into finger-wide strips. Rinse and pat dry zucchini, halve lengthwise and cut into 1 cm slices (approximately 1/2 inch). Heat oil in a saucepan and brown meat on all sides on high heat. Sprinkle with paprika and remove meat from pan. Saute shallots and garlic in meat drippings, add tomato paste and wine. Return meat to the pan and add broth. Simmer for about 1 hour on medium heat. Add the rest of vegetables, spices and herbs and simmer for another 30 minutes. Season stew with salt, pepper and vinegar.

Cook pasta in boiling salted water according to package instructions. Drain and serve alongside beef and vegetable stew.
