600 grams Beef fillet
2 garlic cloves (peeled)
Nuoc Cham sauce
Peanut oil
3 chili peppers
3 scallions
400 grams Asian Pasta

Preparation steps

Cook the pasta according to package instructions then drain. Rinse the scallions, trim and cut into fine rings. Rinse the chiles, split in half lengthwise and remove the stems.

With a sharp knife, cut the meat into 1 cm (approximately 1/3 inch) thick slices, lightly pound with a meat mallet and rub with the garlic. Heat 3 tablespoons oil in a wok or frying pan and stir-fry the meat over high heat until seared on both sides. Transfer to a shallow bowl and sprinkle with 1 tablespoon nuoc cham sauce.

Deglaze the pan with 2 tablespoons hot water, scraping up any browned. Bring to a boil, add the pasta and toss to combine. Season with salt and add the scallions (reserving some for garnish) and chiles. Transfer to a serving plate and top with the meat. Drizzle with any sauce remaining in the pan and garnish with reserved scallions.
