- 2.333 cups Beets (scrubbed clean)
- 10 Soused herring
- 4 Tbsps Mayonnaise
- 2 Tbsps apple cider vinegar
- 1 large Apple (peeled, cored and grated.)
- ¾ cup fresh Horseradish (peeled and grated)
- 1 Cress
Preparation steps
1.
Steam the beetroot for around 50 minutes. Leave to cool, then peel and cut into sticks.

Arrange two fillets of fish on each plate and cut the rest into strips.
3.
Mix together the mayonnaise and the vinegar and stir in the chopped herring and the beetroot. Season with salt and ground black pepper.
4.
Mix together the apple and the horseradish. Place the beetroot salad on top of the fish, garnish with the cress and serve with the apple and horseradish.
