Ingredients

6 garlic cloves
2 egg yolks

200 milliliters olive oil
1 tsp lemon juice
For Beets
1 ⅕ kilograms very small Beets
3 Tbsps olive oil
salt
freshly ground peppers

Preparation steps

Peel garlic and squeeze through a garlic press into a bowl. Add egg yolks, season with salt and pepper and whisk. Add olive oil gradually, whisking constantly. If sauce is too thick, add some lemon juice. Season with salt and pepper and refrigerate, covered, until needed.

Rinse beets thoroughly and cook in salted water for about 35 minutes. Drain, rinse with cold water and drain again. Peel.

3.

Heat oil in a large pan and saute beetroots for a few minutes, stirring. Season with salt and pepper. Place into bowls, drizzle with aioli and serve.
