2 Tbsps olive oil
1 Squid (cleaned)
1 clove garlic cloves (finely chopped)
2 ripe Tomatoes (chopped)
½ bunch parsley (chopped)
salt

Preparation steps

1.
Put the pasta through the tagliatelle cutters on your pasta machine or slice lengthways into strips about ½ cm wide.
2.
Lightly flour and leave hanging while you get the sauce ready.
3.
Open the squid out like a book. Lightly score each side of the squid into cross-hatch with a sharp knife, then cut into large-ish pieces.
4.
Heat the oil in a pan until smoking and add the squid. Cook for 2 minutes or until just opaque. Add the garlic and tomatoes and set aside.
5.
Meanwhile cook the pasta for 2-3 minutes in boiling salted water. Drain, reserving 3 tbsp cooking water and toss with the squid, adding the water to lubricate.
6.
Serve sizzling with the parsley scattered over.
