300 grams Pastry flour
3 eggs
1 Tbsp olive oil
½ tsp salt
For the topping
3 garlic cloves
2 Tbsps butter
½ bunch Sage

Preparation steps

For the pasta, sift the flour onto a work surface. Form a well in the center and pour in the eggs. Add salt and oil. Knead into a smooth dough. If necessary, add water. Wrap in plastic and let sit for about 30 minutes.

Divide the dough into 3 parts. Wrap 2 in plastic. Take the third pieces in hand and remove a small portion. Pull the dough, stretching into a long tube. Flatten the noodle and let it rest on a floured surface. Repeat the process with the remaining dough. Drop the noodles into boiling salt water and simmer for 3-4 minutes.

Pluck the sage leaves. Peel the garlic, slice and slowly saute in hot butter. Drop in the dripping wet noodles, add the sage and season with salt. Serve warm.
