150 grams Buckwheat flour
150 grams Pastry flour
1 pinch salt
20 grams Yeast
350 milliliters lukewarm milk
2 Tbsps melted butter
3 eggs
clarified butter (for frying)
200 grams Sour cream
4 Tbsps Whipped cream
2 Tbsps scallions

Preparation steps

1.

Separate the eggs. Combine the flour and the buckwheat flour. Dissolve the yeast in the milk and mix with the melted butter, egg yolk and salt. Add to the flour and leave covered in a warm place for about 20 minutes to rise.

Whisk the egg whites until stiff and mix into the batter before cooking.

Heat some butter in a pan and pour on a tablespoon of batter. Fry on each side for 1-2 minutes until golden brown. Repeat the process for the remaining blinis.

4.

Mix the sour cream with the cream until smooth and season with salt and pepper.

5.

Serve the blinis with the sour cream and garnished with chives.
