This is a very simple and quick alternative to the traditional method of cooking blueberry jam. If you have fresh blueberries and need to use them up, you can easily make this recipe and extend their shelf life for a little while longer. Blueberry jam is sweet and goes very well on many things and is an easy way to get valuable nutrients into your daily diet.
Spoon onto some greek yogurt in the morning for a sweet, balanced, protien-and-nutrient rich breakfast.

- 3 ½ lbs Blueberries
- 18 ozs jam sugar (3:1 ratio - Gelling sugar with Pectin)
- 2 sprigs Lemon thyme
- 2 Limes (juiced)
Preparation steps
Rinse the blueberries, and remove any remnants of the leaves, then drain well. Add with the sugar, lemon thyme, and lime juice to a pan, and let marinate together for 1 hour. Bring to a boil and cook for 4 minutes, stirring constantly. Remove the thyme from the pan.
Fill the jam into prepared jars, and seal tightly. Turn upside down for 10 minutes, then turn right side up and cool completely.
