2 kilograms small, waxy potatoes
500 grams coarse Sea salt
4 Tomatoes
1 Red onion
2 Tbsps olive oil
1 tsp lemon juice

Preparation steps

Rinse the potatoes, put in a pan and cover with water. Stir in salt and let cook until tender, about 25 minutes.

For the salsa, rinse and cut the tomatoes into quarters, remove the seeds and dice into small pieces. Peel the onion and chop finely. Rinse the parsley, shake dry, pluck and chop the leaves. Mix all ingredients with the oil and season with lemon juice and pepper.

3.

Drain the potatoes and allow to cool on the stove until a salt skin has formed on the potatoes. Serve with the salsa.
