400 grams lamb (shoulder, finely diced)
8 bay leaves
4 thyme
3 garlic cloves
100 grams black Olives
freshly ground peppers
salt
olive oil (extra virgin)
1 dark, round Bread (such as rye or wheat, 1 kg or approximately 2 pounds)
1 bunch scallions
4 ripe Tomatoes
2 Tbsps colorful peppercorns

Preparation steps

Season the lamb with salt and pepper. Peel the garlic. In a bowl, combine 4 tablespoons olive oil, bay leaves, thyme, peppercorns, garlic cloves with the lamb and mix well. Rinse, trim and halve the scallions. Remove most of the green part. Rinse the tomatoes, cut in half, remove the core and dice. Cut the top of the bread to form a lid, then scoop out most of the inside of the bread.

Fill the bread with the spiced meat. Top with diced tomatoes and olives. Season with salt and pepper. Place the top back on the bread. Preheat oven to 150°C (approximately 300°F). Place the stuffed bread on a baking sheet and bake on the bottom rack for 50 minutes, until the meat is cooked. If the bread is becoming a bit too dark, then turn the temperature down to 100°C (approximately 200°F) and continue to bake. Remove from the oven, place on a platter and serve immediately.
