- ⅞ cup cream
- 2 Tbsps chopped Lemon balm
- 2 Tbsps chopped mint
- 1 Tbsp finely chopped spring onions
- 21 ozs Chicken breasts
- 3 Tbsps lemon juice
- 6 Tbsps breadcrumbs
- 2 Tbsps Sesame seeds

Preparation steps
1.
Cube the melba toast and soften it in the cream.
2.
Chop the chicken fillets into small pieces. Puree along with the toast cubes, cream, 1 tsp of salt, pepper and lemon juice in a food processor or an electric grinder.

Mix in the spring onions and herbs. With damp hands, form the meat mixture into meatballs. You should get about 20.
4.
Mix together the bread crumbs and the sesame seeds in a shallow dish. Dredge the meatballs.
5.
Fry the meatballs in hot oil for approximately 5 minutes browning all sides.
