Preparation steps

Cut the squid tentacles from the body in once piece, so they are still intact. Slice the body lengthwise into 2 cm (approximately 3/4 inch) strips.

Thread the squid onto wooden skewers like an accordion. Cut the tentacles in half and place on top of the skewers.

On a plate, mix the breadcrumbs with the Parmesan cheese, garlic, and parsley, and season with salt and pepper to taste. Coat the skewers in the breadings so they are covered. Place the skewers in an oven dish and spread the tomato slices around. Baked in a 200°C (approximately 390°F) oven until cooked, about 20 minutes. Turn on the broiler and cook for 2-3 minutes until the squid is golden. Serve drizzled with lemon juice.
