500 grams ripe Tomatoes
2 garlic cloves
4 Tbsps olive oil
salt
1 pinch sugar
freshly ground peppers
4 Steak fillet (each 160-180 grams)
2 Tbsps Double cream
100 grams grated Parmesan
1 Tbsp pickled green peppers

Preparation steps

Score tomatoes crosswise, blanch, rinse with cold water and peel. Remove the stems and cut flesh into pieces. Peel garlic and chop finely.

Sauté garlic and tomatoes in a pan in 1 tablespoon oil. Season with salt, pepper and sugar and bring to a boil. Cook until thickened, stirring frequently.

Sear steaks in the remaining oil for about 3 minutes on each side. Season with salt and pepper, wrap in aluminum foil and keep warm.

Combine tomato mixture with the heavy cream and season to taste. Remove steaks from the foil and place in a shallow oven-proof dish. Spread with the tomato cream and sprinkle with Parmesan. Broil under the preheated oven broiler on high until a crispy crust has formed, watching carefully. Coarsely grind the peppercorns in a mortar and sprinkle over the steaks. If desired, serve with a baguette and a crisp salad.
