100 grams green Peas

2 Tbsps freshly chopped parsley
3 eggs
2 Tbsps freshly chopped mint
80 grams Pastry flour

Preparation steps

Preheat oven to 200°C (approximately 400°F).

For the pea diamonds, rinse and blanch peas in salted boiling water, about 8 minutes. Rinse with cold water and drain well. In a blender, puree peas with parsley.

Separate eggs. Whisk together yolks, a pinch of salt, pureed peas and chopped fresh mint. Beat egg whites until stiff, then fold into pea mixture. Sprinkle with flour and fold into mixture. Spread on a baking sheet lined with parchment paper. Bake until golden-brown, about 15 minutes (test for doneness by inserting a toothpick). Remove from oven, let cool and cut into diamond shapes.

Heat broth. Place pea diamonds in bowls and ladle in hot broth.
