For the salmon
800 grams Salmon
2 Tbsps Orange honey
200 grams frozen Peas
100 grams Watercress
1 handful mint
scallions (from 2 scallions)
For the dressing
3 Tbsps olive oil
2 Tbsps balsamic vinegar
3 Tbsps Orange juice

Preparation steps

Preheat the oven to 140°C (approximately 275°F).

For the salmon, brush the salmon fillet with honey, place on an aluminum foil-lined baking sheet and bake for about 20 minutes. Cook peas in boiling water for 4-6 minutes, drain in a colander and rinse well. Rinse the watercress and mint and shake dry. Rinse the scallion greens and cut into rings. For the dressing, mix the oil, balsamic vinegar and orange juice.

Cut the salmon fillets into 8 slices, arrange with the salad ingredients on plates and serve drizzled with the dressing.
