Ingredients
- For sage butter
- 2 sprigs Sage
- 1 garlic clove
- 125 grams butter
- For lemon butter
- 1 organic lemon
- 125 grams butter
- 1 ginger
- 1 chili pepper
- For Poppy Butter
- 50 grams Poppy seeds
- 125 grams butter
- Ground cinnamon
- 1 tsp powdered sugar
Preparation steps
For the sage butter, rinse the sage and pat dry. Peel and finely dice the garlic, or cut into slices. Melt the butter in a pan over low heat until foamy. Add the garlic and sage to the pan. Stir to combine, remove from the heat, and season to taste.
This sauce goes well with gnocchi, pasta, and grilled meat.
The lemon butter goes well with fish, seafood, or a deessert such as a pastry. Remove the zest from the lemon in thin strips using a knife or a zester. Melt the butter in a pan until frothy, then remove from the heat. Add the lemon zest, ginger, and chili and stir to combine.
The poppy butter goes well with a hearty pasta or sweet dumplings for dessert. By toasting the seeds, it intesifies the flavor. Toast the poppy seeds in a dry pan until fragrant. Remove from the pan and let cool. Melt the butter in the pan until foamy. Remove from the heat, add the poppy seeds, and stir to combine. Mix in the powdered sugar, and stir well.
