2 Tbsps olive oil
2 shallots (finely chopped)
2 cloves garlic cloves (finely chopped)
1 small Savoy cabbage (stem removed and coarsley shredded)
1 Tbsp tomato puree
2 ½ cups vegetable stock
1 cup canned chickpeas (drained and rinsed)
2 Tomatoes (finely chopped)
1 tsp freshly grated ginger (peeled and grated)
1 red chili pepper (deseeded and finely chopped)
½ cup Parmesan (roughly grated)

Preparation steps

1.
Heat the oil in a deep pan and fry the shallots and the garlic for a couple of minutes.
2.
Add the cabbage and fry gently for about 2 minutes.
3.
Stir in the tomato puree and the stock.
4.
Add the chickpeas, tomatoes, ginger and chilli and simmer covered for 20 minutes, stirring occasionally.
5.
Season with salt and pepper and serve with grated Parmesan.
