400 grams Green cabbage
1 ripe Mango
1 red chili pepper
1 pc fresh ginger (about 3 cm)
1 small onion
2 Tbsps Rice vinegar
2 Tbsps Peanut oil
2 Tbsps soybean oil
2 Tbsps Lime juice
1 pinch brown sugar
1 Tbsp light soy sauce
salt
2 Tbsps finely chopped cilantro
4 garlic cloves
vegetable oil (for frying)
60 grams unsalted Peanuts

Preparation steps

Rinse cabbage and remove thick ribs, then slice very thinly. Peel mango and cut fruit away from the pit. Cut fruit into thin strips. Rinse and halve chile lengthwise, remove seeds and ribs, and dice finely.

Peel and finely chop ginger and onion. Combine all prepared salad ingredients in a large bowl. To make dressing: Whisk together vinegar, oil, lime juice, sugar, soy sauce, salt to taste and cilantro. Toss salad with dressing.

Peel and thinly slice garlic. In a skillet, fry garlic in hot oil until golden-brown. Drain garlic on paper towels and sprinkle with a little salt. Coarsely chop nuts. Divide salad among plates or bowls and serve sprinkled with nuts and garlic.
