Cabbage Pot with Smoked Pork Cubes

White cabbage is an immune booster, because it is full of vitamin C and zinc. In addition, it stimulates our digestion by providing plenty of fibre. Potatoes also contain fibre, which together ensure a long lasting satiation.
You can vary and add vegetables to the white cabbage pot as you wish. You can also add frozen vegetables such as heirs or beans to the stew. A hearty onion bread goes well with it.

- ½ White cabbage
- 500 grams potatoes (starchy)
- 1 large white onion
- 2 sprigs parsley
- 3 carrots
- salt
- peppers (freshly ground)
- 2 Tbsps olive oil
- 250 grams Smoked pork chop
- 1 Tbsp parsley (finely chopped)
Preparation steps
Rinse the cabbage, remove the stalk and cut the leaves into small pieces. Peel and dice the potatoes and carrots. Peel and finely chop the onion. Heat the oil in a large saucepan and sauté the onion gently. Add the white cabbage, potatoes and carrots and fry while stirring. Pour in plenty of hot water and barely cover the vegetables with it.
Season with salt and pepper. Add in the parsley, bring to a boil, then cover and turn down the heat to simmer for 40 minutes. Cut the smoked pork into small cubes and add it to the pot about 5 minutes before end of cooking. Remove the parsley stalks. Season the soup again with salt if necessary, stir in fresh parsley and serve immediately.
