100 grams Bacon
100 milliliters olive oil
1 large Romaine lettuce
For the dressing
1 garlic clove
1 tsp lemon juice
½ tsp spicy Mustard
1 tsp Worcestershire sauce
1 egg yolk
2 Tbsps Whipped cream (as needed)
salt
freshly ground peppers
1 pinch sugar
to garnish
2 Tbsps grated Parmesan

Preparation steps

Remove the crust from the bread, then cut into 1 cm (approximately 1/2 inch) cubes. Finely dice the bacon, and then cook 2 tablespoons of oil in a frying pan. Remove from the pan and drain on paper towels. Toast the cubes of bread in the bacon fat until golden brown. Remove from the pan and drain.

Rinse and trim the romaine thoroughly. Dry well and tear the leaves into small pieces.

Peel the garlic, and add to a blender with the remaining oil, lemon juice, mustard, 1 teaspoon worcestershire sauce, and the egg yolks. Puree until creamy. Season to taste with salt, pepper, and sugar. If necessary, thin with a little water or cream.

Mix the lettuce with the dressing, then divide into bowls. Top with the croutons and bacon. Garnish with the parmesan, and serve.
