6 slices day-old Baguette

1 Romaine lettuce
2 Tbsps Yogurt (0.1% fat)
2 Tbsps water
1 Tbsp grated Parmesan
1 Tbsp olive oil
1 Tbsp Red wine vinegar
½ tsp Mustard
½ tsp Anchovy paste
30 grams Parmesan (piece)

Preparation steps

1.

Bake baguette slices in the oven at 180°C (approximately 350°F) until golden, about 8 minutes. Peel garlic, cut in half, rub into bread and slice bread into quarters.

Finely chop garlic. Rinse lettuce thoroughly, spin dry and tear into bite-sized pieces. For the dressing, combine yogurt, grated Parmesan, water, oil, vinegar, mustard, garlic and anchovy paste and mix well.

3.

Drizzle dressing over the salad, mix well and garnish with the baguette pieces. Shave remaining Parmesan cheese over salad.
