California Bagel

- 2 Eggplant
- 1 shallot
- 1 Tbsp freshly chopped parsley
- 1 garlic clove
- lemon juice
- salt
- 4 Tbsps olive oil
- freshly ground peppers
- ½ Cucumber
- 2 Tomatoes
- 1 Avocado
- 4 leaves Lettuce
- 1 handful Radish sprout
Preparation steps
Preheat the oven to 200°C (approximately 400°F).
Rinse eggplants, pat dry and pierce with a fork several times. Cook eggplant in the preheated oven until skin begins to bubble, is wrinkled and flesh feels soft, about 20 minutes. Then remove eggplant from the oven, allow to cool slightly, peel and remove stem. Finely mash cooled eggplant pulp with a fork. Peel shallot and garlic and finely chop. Mix eggplant in a bowl with shallot, garlic and oil season with lemon juice, salt and pepper.
Cut bagels in half horizontally. Spread with eggplant puree. Peel cucumber and cut into slices. Rinse tomatoes, remove stalks and cut into slices. Peel avocado, cut in half, remove pit and cut into thin slices. Rinse lettuce, dry shake and tear into small pieces. Place cucumber, tomatoes, avocado, lettuce and radish sprouts on bagels, place top half of bagel on top and serve.
