400 grams fresh Fruit (sliced ​​or bite-sized pieces)
350 grams brown sugar
50 grams Glucose

Preparation steps

1.

Mix 400 mL (approximately 15 ounces) of water with sugar and boil down to a thick syrup until temperature reaches 110°C (approximately 230°F) on a candy thermometer. Pour hot mixture over fruit slices and pieces and infuse for 24 hours in syrup.

After 24 hours, pour off remaining liquid, boil again until thick. Pour over fruit and infuse an additional 24 hours. Place the fruit slices and pieces on a rack and let dry for 24 hours.
