- 1 Tbsp Raspberry vinegar
- 2 Tbsps lemon juice
- 1 Tbsp honey
- cayenne pepper
- ½ handful mint (sliced)
- 1.333 cups cooked Prawn (peeled and deveined)
- 1 Cantaloupe (halved and cut into thin wedges)
- 1 ½ cups Feta (diced or crumbled)
Preparation steps
1.
Whisk together the raspberry vinegar, lemon juice, honey, a pinch of cayenne pepper and a little sea salt to form a dressing. Stir in the mint and add the prawns.

Arrange the melon slices on plates. Distribute the dressing mixture over the melon slices. Scatter the feta over the top of the salad and serve.
