Preparation steps

When preparing the mayonnaise, it's important that all the ingredients are room temperature. Beat the eggs with the salt, mustard, and 1 tablespoon of the lemon juice vigorously.

Whisk in a few drops of the oil until incorporated. Gradually increase the stream of oil, making sure to incorporate all the oil thoroughly. Add enough oil to form a thick and creamy mayonnaise. Add the capers, then season with salt, pepper, and lemon juice. Garnish with chives.
