Preparation steps

1.
Peel and crush the garlic cloves.

Combine the garlic, mustard and a pinch of salt and pepper in a large bowl. Beat until creamy.
3.
Add the oil, drop by drop (later in a slow stream) beating constantly. Incorporate the oil completely into the mixture before adding more. When the oil is fully incorporated, stir in the lemon juice.
4.
Season with salt and pepper to taste and serve.
