Preparation steps

Peel the garlic and pass through a press. Whisk the egg yolks with the garlic until the mixture is a pale yellow in color.

Gradually incorporate the oil, stirring constantly. Only add enough oil until a thick, creamy mayonnaise-like sauce has formed. Season to taste with salt, pepper, and lemon juice.
