- 3 Tbsps Oil
- 32 ozs braising Beef (cut into cubes)
- 8 shallots (peeled)
- 2 cloves garlic cloves (chopped)
- 1 tsp cayenne pepper
- 1 tsp ground Cumin
- 3 cups Beef stock
- 1 cup canned Tomatoes (chopped)
- 8 small new Potato (scrubbed)
- 1 bunch Baby carrots (peeled)
- 7 ozs green String bean (trimmed)
- 2 cups canned White bean (drained)
- 2 Tbsps chopped parsley
- parsley (to garnish)
Preparation steps

Heat the oil in a large pan and brown the meat on all sides. Remove the meat from the pan and set aside.

Gently cook the shallots in the pot until they start to take colour then add the garlic, cayenne pepper and cumin and cook for 2 minutes.

Return the meat to the pan and add the stock and tomatoes. Bring to a boil, season with salt and pepper then simmer very gently for 45 minutes.

Add the potatoes to the pan, cook for 10 minutes then add the carrots and cook for a further 10 minutes.
5.
Add the green beans, white beans and parsley and cook for 15 more minutes. Serve garnished with parsley leaves.
