- 2 medium Zucchini (grated)
- 2 medium carrots (grated)
- 1 egg (beaten)
- ¼ cup Parmesan
- 0.333 cup white Whole wheat flour
- ½ tsp Baking powder
- 1 tsp salt (divided)
- 0.333 cup vegetable oil (more if needed)
- For Yogurt Dip
- ¼ cup Greek yogurt
- 1 Tbsp Mayonnaise
- 1 tsp lemon juice
- 1 tsp Dijon mustard
- 1 tsp honey
- freshly ground Black pepper (to taste)
Preparation steps

Grate the zucchini and carrots and toss with 1/2 teaspoon salt. Let sit for 10 minutes.

Squeeze out at as much water as you can from the shreds. Too much moisture will not allow for the fritters to hold their shape.

Add the egg and Parmesan cheese to the zucchini/carrot mixture.

Mix the flour and baking powder in a small bowl and add to the mixture. Add the rest of the salt and mix until all ingredients are combined.
5.
Form medium-sized patties by hand. Working in batches. fry the patties in oil for 7-10 minutes per side at medium-low heat, until golden brown.

Combine all ingredients in a small bowl and season with pepper. Serve with the fritters.
