- 0.333 cup olive oil
- 1 Tbsp lemon zest
- 1 medium garlic clove (minced)
- 1 tsp sugar
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- 1 ½ cups carrots (peeled and julienned)

Preparation steps

In a medium bowl combine lemon juice, olive oil, lemon zest, minced garlic, sugar, salt and pepper. Whisk dressing until well incorporated. Add the carrots and toss to coat. Serve chilled or at room temperature.
