800 grams Cauliflower
salt
200 milliliters Whipped cream (at least 30% fat content)
100 milliliters milk
100 grams freshly grated Emmentaler cheese
2 eggs
freshly ground peppers
Nutmeg
2 slices white bread (crust removed)

Preparation steps

1.

Preheat a convection oven to 180°C (approximately 350°F). Buteer an oven-proof dish or pan.

Rinse the cauliflower florets and blanch in boiling salted water for 2 minutes. Remove, drain, and add the the buttered dish. Mix the cream with the milk, cheese, and eggs. Season to taste with salt, pepper, and nutmeg and pour over the caulflower. Cut the bread into small cubes, and use top top the cauliflower. Bake 25-30 minutes, or until golden brown.
