1 kilogram Celery root
Fat (for the pan)
1 organic lemon (juice)
70 grams Pancetta (sliced)
100 grams grated Gruyere
400 milliliters Whipped cream
1 garlic clove

Preparation steps

Preheat the oven to 180°C (approximately 350°F). Peel the celery root and cut into slices. Layer the celery root in a small, greased baking dish and sprinkle with lemon juice. Cut the pancetta into long strips and spread over the celery root.

Mix the cheese, cream and squeezed garlic. Season with salt, pepper and nutmeg. Pour the cream over the celery root and sprinkle with parsley, if desired. Bake for 25-30 minutes, until golden brown. Remove from the oven and serve immediately.
