4 scallions
1 red chili pepper
1 garlic clove
1 Tbsp olive oil
8 Tortillas (soft flour tortillas)
300 grams grated Manchego (or Emmental, Gouda)

Preparation steps

1.

Rinse and trim the scallions and cut into small rings. Rinse and trim the chile pepper, remove the seeds and finely chop. Peel and finely chop the garlic.

Grease a large pan with oil and lay a tortilla on top.

Distribute 1/4 of the cheese, scallions, garlic and chile pepper over it and lay a second tortilla on top. Fry briefly until the tortilla is golden brown and the cheese begins to melt. Turn it over and lightly fry the other side.

3.

Cook the remaining quesadillas in the same manner.

Keep the finished quesadillas warm in the oven at 80°C (approximately 175ºF).

4.

Suggestion: Serve with guacamole or tomato salsa.
