- 100 grams Spinach
- 1 egg white
- 2 Tbsps Goat cheese
- 80 grams Goat cheese
- 6 eggs
- 4 Tbsps Whipped cream
- salt
- peppers
Preparation steps

Cut goat cheese into small cubes. Rinse spinach and trim. Blanch in boiling salted water, drain, rinse and drain again. Express, finely chop and mix with goat cheese and egg white. Beat eggs with heavy cream and season with salt and pepper.

Butter baking dish. Spread spinach mixture into bottom of dish and top with egg mixture. Bake at 140°C (approximately 275°F) until egg has swelled but don't allow to brown. Cover if necessary. Cool, remove from baking dish and cut into slices. Garnish with cherry tomatoes and chives to serve.
