225 grams Pastry flour

1 Tbsp freshly chopped thyme
1 tsp Baking powder
150 grams freshly grated Cheese (such as Gtuyere or Emmentaler)
4 Tbsps olive oil
2 Tbsps Pine nuts
200 milliliters Buttermilk
2 eggs
40 grams Chives (with flowers)
200 grams Quark
2 Tbsps Whipped cream
1 splash lemon juice
freshly ground peppers

Preparation steps

Line muffin baking tray with muffin paper cups.

Combine flour with a pinch of salt, thyme, baking powder and 100 grams (approximately 3 1/2 ounces) of cheese. Puree oil with pine nuts, combine with buttermilk and eggs. Add flour mixture to egg mixture and mix lightly. Pour batter into muffin cups. Sprinkle with remaining cheese and bake in preheated oven at 180°C (approximately 350°F) for about 30 minutes or until golden brown.

Remove from oven and cool slightly in the tray, take out of tray and cool on a wire rack.

For the topping: rinse chives, shake dry, cut off flowers for garnishing and cut the rest into small rings. Combine with cream cheese and cream and season with lemon juice, pepper and a little salt. Top muffins with a cream and garnish with chive flowers. Serve.
