350 grams Pastry flour
½ tsp salt
1 pkg Baking powder
½ tsp sweet ground paprika
1 tsp dried herbes de Provence
150 grams freshly grated Parmesan
200 milliliters Buttermilk (more as needed)
2 eggs
5 Tbsps olive oil
2 slices Bacon
butter (for greasing)
breadcrumbs (for dusting)

Preparation steps

1.

Combine the flour, salt, baking powder, paprika and herbs and mix well. Stir in the cheese and then mix in the buttermilk, eggs and oil. If the dough is too dry add some additional buttermilk.

Grease a muffin tin with butter and dust with breadcrumbs. Distribute the muffin batter into the greased muffin tin. Cut the bacon into small cubes and sprinkle it over the muffins.

3.

Bake in a preheated oven at 200°C (approximately 400°F) for 20-30 minutes, until a toothpick comes out clean.

4.

Remove from the oven, cool slightly in the muffin tin, and then transfer to a wire rack to cool completely.
