150 grams Spinach (frozen)
softened butter (for pan)
soft Pastry flour (for pan)
2 garlic cloves
1 tsp salt
½ tsp ground Nutmeg
½ tsp ground peppers
100 grams Feta
100 grams Hard cheese (such as Gouda, Emmental)
2 eggs
100 grams melted butter
250 milliliters milk
250 grams Pastry flour
3 tsps Baking powder

Preparation steps

Thaw the spinach. Butter the wells of a muffin pan and dust with flour.

Preheat the oven to 180°C (approximately 350°F).

Squeeze the spinach and chop. Peel garlic and squeeze. Mix in the salt, nutmeg and pepper. Cut the feta and hard cheese into small cubes. Whisk together the eggs, milk and butter. Stir the mixture into the spinach. Sift together the flour with baking powder, add to spinach and mix in briefly along with the cheese, just until all the ingredients are slightly damp. Pour batter into the wells and bake in the oven about 25 minutes.
