Preparation steps

1.

Mix the eggs with the milk, and season to taste with salt and pepper.

2.

Rinse, trim, and thinly slice the scallion. Rinse, trim, and finely dice the pepper.

3.

Heat the oil in an ovenproof pan. Distribute the egg mixture into the pan. Sprinkle with the scallion and diced pepper. Cook, covered for 2 minutes. 

4.

Fold the omelet into the middle, then top with the cheese. Bake in a 220°C (approximately 430°F) oven for about 5 minutes.
