Cheese Quiche
Ingredients
- For the dough
- 100 grams cold butter
- 200 grams Pastry flour
- 1 egg yolk
- 1 pinch salt
- Pastry flour (for dusting)
- Parchment paper (for blind baking)
- Dried pea (for blind baking)
- For the filling
- 400 grams Goat cheese
- 125 milliliters milk
- 3 eggs
- salt
- freshly ground pepper
- freshly grated Nutmeg
- scallions
- 1 pc Goat cheese
Preparation steps
For the dough, chop the butter into small pieces. Quickly knead the butter, flour, egg yolk, salt and 2 tablespoons of cold water into a smooth dough. Form the dough into a ball, wrap in plastic and chill for about 1 hour.
For the filling, mix the goat cheese and milk. Stir in the eggs. Season with salt, pepper and nutmeg.
Roll out the dough between 2 sheets of parchment paper. Sprinkle a buttered dish with the flour and line with the dough, forming an edge. Cover the dough with parchment paper and spread the dried peas on top. Bake for about 12 minutes at 220°C (approximately 425°F). Remove from the oven, remove the parchment paper and peas and let cool. Lower the oven temperature to 200°C (approximately 400°F).
Pour the cheese mixture on the crust. Bake for 30-40 minutes. Serve garnished with the goat cheese roll and chives.
