250 grams Pastry flour
125 grams cold butter
1 egg
1 pinch salt
150 grams Feta
400 grams Quark
4 eggs
1 bunch Wild garlic
1 bunch Cress
1 bunch scallions
1 bunch parsley
1 thick ham (200 grams)
salt
freshly ground peppers
butter (for the pan)

Preparation steps

Pile flour on the work surface and make a well in the center. Add beaten egg and salt to the well. Cut butter into pieces and arrange around the well. Knead quickly into smooth pastry, shape into a ball and wrap in plastic wrap. Refrigerate for 30 minutes.

Preheat the oven to about 180 degrees.

Crumble feta and combine with quark and eggs in a large bowl. Rinse and shake dry wild garlic, chop. Rinse and dry scallions, cut green parts into small rings. Rinse and shake dry parsley, pluck off leaves and chop. Dice ham small.

Add all ingredients to cheese mixture and season with salt and pepper.

Butter baking pan and roll out pastry, line baking pan with it, making high edge all around. Bake in preheated oven at 180°C (approximately 350°F) for about 15 minutes. Remove from oven and cool slightly.

Spread cream mixture on top and bake for another 45 minutes or until golden brown. Garnish with fresh cress and serve.
